一 防火墙基本原理 首先，我们需要了解一些基本的防火墙实现原理。防火墙目前主要分包过滤，和状态检测的包过滤，应用层代理防火墙。但是他们的基本实现都是类似的。 │ │---路由器-----网卡│防火墙│网卡│----------内部网络│ │ 防火墙一般有两个以上的网络卡，一个连到外部（router)，另一个是连到内部网络。当打开主机网络转发功能时，两个网卡间的网络通讯能直接通过。当有防火墙时，他好比插在网卡之间，对所有的网络通讯进行控制。 说到访问控制，这是防火墙的核心了：），防火墙主要通过一个访问控制表来判断的，他的形式一般是一连串的如下规则： 1 accept from+ 源地址，端口 to+ 目的地址，端口+ 采取的动作 2 deny ...........（deny就是拒绝。。) 3 nat ............(nat是地址转换。后面说） 防火墙在网络层（包括以下的炼路层）接受到网络数据包后，就从上面的规则连表一条一条地匹配，如果符合就执行预先安排的动作了！如丢弃包。。。。 但是，不同的防火墙，在判断攻击行为时，有实现上的差别。下面结合实现原理说说可能的攻击。 二 攻击包过滤防火墙 包过滤防火墙是最简单的一种了，它在网络层截获网络数据包，根据防火墙的规则表，来检测攻击行为。他根据数据包的源IP地址；目的IP地址；TCP/UDP源端口；TCP/UDP目的端口来过滤！！很容易受到如下攻击： 1 ip 欺骗攻击： 这种攻击，主要是修改数据包的源，目的地址和端口，模仿一些合法的数据包来骗过防火墙的检测。如：外部攻击者，将他的数据报源地址改为内部网络地址，防火墙看到是合法地址就放行了：）。可是，如果防火墙能结合接口，地址来匹配，这种攻击就不能成功了：（ 2 d.o.s拒绝服务攻击 简单的包过滤防火墙不能跟踪 tcp的状态，很容易受到拒绝服务攻击，一旦防火墙受到d.o.s攻击，他可能会忙于处理，而忘记了他自己的过滤功能。：）你就可以饶过了，不过这样攻击还很少的。！ 3 分片攻击 这种攻击的原理是：在IP的分片包中，所有的分片包用一个分片偏移字段标志分片包的顺序，但是，只有第一个分片包含有TCP端口号的信息。当IP分片包通过分组过滤防火墙时，防火墙只根据第一个分片包的Tcp信息判断是否允许通过，而其他后续的分片不作防火墙检测，直接让它们通过。 这样，攻击者就可以通过先发送第一个合法的IP分片，骗过防火墙的检测，接着封装了恶意数据的后续分片包就可以直接穿透防火墙，直接到达内部网络主机，从而威胁网络和主机的安全。 4 木马攻击 对于包过滤防火墙最有效的攻击就是木马了，一但你在内部网络安装了木马，防火墙基本上是无能为力的。 原因是：包过滤防火墙一般只过滤低端口（1-1024），而高端口他不可能过滤的（因为，一些服务要用到高端口，因此防火墙不能关闭高端口的），所以很多的木马都在高端口打开等待，如冰河，subseven等。。。 但是木马攻击的前提是必须先上传，运行木马，对于简单的包过滤防火墙来说，是容易做的。这里不写这个了。大概就是利用内部网络主机开放的服务漏洞。 早期的防火墙都是这种简单的包过滤型的，到现在已很少了，不过也有。现在的包过滤采用的是状态检测技术，下面谈谈状态检测的包过滤防火墙。状态检测技术最早是checkpoint提出的，在国内的许多防火墙都声称实现了状态检测技术。 可是：）很多是没有实现的。到底什么是状态检测？ 一句话，状态检测就是从tcp连接的建立到终止都跟踪检测的技术。 原先的包过滤，是拿一个一个单独的数据包来匹配规则的。可是我们知道，同一个tcp连接，他的数据包是前后关联的，先是syn包，-》数据包=》fin包。数据包的前后序列号是相关的。 如果割裂这些关系，单独的过滤数据包，很容易被精心够造的攻击数据包欺骗！！！如nmap的攻击扫描，就有利用syn包，fin包，reset包来探测防火墙后面的网络。！ 相反，一个完全的状态检测防火墙，他在发起连接就判断，如果符合规则，就在内存登记了这个连接的状态信息（地址，port，选项。。）,后续的属于同一个连接的数据包，就不需要在检测了。直接通过。而一些精心够造的攻击数据包由于没有在内存登记相应的状态信息，都被丢弃了。这样这些攻击数据包，就不能饶过防火墙了。 说状态检测必须提到动态规则技术。在状态检测里，采用动态规则技术，原先高端口的问题就可以解决了。实现原理是：平时，防火墙可以过滤内部网络的所有端口(1-65535),外部攻击者难于发现入侵的切入点，可是为了不影响正常的服务，防火墙一但检测到服务必须开放高端口时，如（ftp协议，irc等），防火墙在内存就可以动态地天加一条规则打开相关的高端口。等服务完成后，这条规则就又被防火墙删除。这样，既保障了安全，又不影响正常服务，速度也快。！ 一般来说，完全实现了状态检测技术防火墙，智能性都比较高，一些扫描攻击还能自动的反应，因此，攻击者要很小心才不会被发现。 但是，也有不少的攻击手段对付这种防火墙的。

　　2015WBrC世界咖啡冲煮大赛的精彩现场依然留给我们很多讨论和学习的空间。这里分享一篇文章，详细解读WBrC六强选手的冲煮方法，希望对喜欢咖啡的你有帮助。 　　世界咖啡冲煮大赛要求选手同时展示卓越的冲煮技巧与服务水平。在三位大赛评委面前，来自世界各地的参赛者需要准备和冲煮三份饮品。在初赛中，选手完成指定冲煮项目和自由冲煮项目各一项。在指定冲煮项目中，选手需要用大赛指定并提供的咖啡豆去准备饮品。在自由冲煮项目中，选手可以自选咖啡豆和冲煮方法，并必须在三位评委面前展示冲煮全过程。 　　经过激烈的初赛后，从28位参赛选手中挑选6位进入2015年6月18日星期四于瑞典城市哥德堡举行的WBrC总决赛，下面就是从第六名到第一名选手他们的冲煮方法详解。 　　 第六名：俄罗斯选手Ruslan Shulga的冲煮方法 　　来自俄罗斯的选手RuslanShulga所使用的咖啡生豆是来自翡翠庄园生长在海拔1700米以上的日晒瑰夏。Shulga表示“日晒豆在烘焙过程中对于温度是相当敏感的”。实际上，Shulga在比赛前尝试用不同的烘豆机进行了20多次的烘焙试验，最终才确定了用于比赛的烘焙方法。 　　Shulga使用了15克粉和250克水，用 V60滤杯进行手冲，冲出的咖啡具有丰富的果酸。Shulga的咖啡闻起来有柑橘，焦糖，和香草的味道；尝起来有桃味冰茶，柑橘，焦糖风味并且带有中度偏甜的柑橘酸。随着咖啡温度的下降，酸度更加明显。 　　 第五名：荷兰选手Kerkhoff的冲煮方法 　　Rob Kerhoff的开场白很精彩: “欢迎来到mini版咖啡台。咖啡的每一个环节都充满着创新”。那么创新也必然会体现在他的冲煮过程中。Kerhoff使用的咖啡豆来自哥斯达黎加的埃尔迪亚曼特（El Diamante），使用的是厌氧发酵处理法（anaerobic fermentation）。不管是卡杜艾品种还是卡杜拉品种，咖啡豆在发酵20个小时后闻起来会有肉桂的味道。 　　Kerkhoff发明了自己的冲煮方法。Kerhoff说: “我在想我喜欢什么样的咖啡呢？我喜欢杯测时喝到的咖啡的醇厚度和Chemex冲的咖啡的明亮度”。他结合了两种方式，把Chemex的`滤纸放在法压壶的滤网里。Kerhoff使用了18克粉和300克水，120bp，7.1ph，93度。在萃取时长为5分30秒的过程中不断搅拌，使萃取率达到最佳值。最终Kerhoff出品的咖啡带有轻微苹果酸，回甘带有新鲜肉桂味，口感中度偏轻。Kerhoff在9分40秒结束比赛。 　　 第四名：美国选手Sarah Anderson的冲煮方法 　　对于此次冲煮比赛，排名第四的美国选手Anderson使用的是来自哥伦比亚的欧基尼奥伊德斯品种（the species eugenioides from Colombia,），被Anderson自己称为“阿拉比卡豆种的孕育者”。因为拥有着强烈的甘甜和精致的酸度，“这个品种的咖啡尝起来感觉相当不一样”，Anderson说。这种咖啡豆的产量在去年大概是200磅，但以后会越来越多。生长在温室里，这种咖啡豆“多少有些娇气，需要人去调整周围的环境来迎合其生长”，Anderson还表示咖啡豆之后会被放进不锈钢发酵容器里。Anderson和她在洛杉矶的Intelligentsia（知识分子咖啡）团队进行过80多种烘焙测试，甚至更多来自Copenhagen"s Coffee Collective的测试，才最终选择出最适合的烘焙方法。 　　Anderson使用的是鸟巢滤杯（AltoAir brewing device，见上图），19克粉和300克水在8分30秒完成冲煮（整个比赛过程）。Anderson选择先在玻璃杯里进行闷蒸1分30秒，然后再倒进装有滤纸的鸟巢滤杯。这种冲煮方法可以使评委们眼前一亮。Anderson对评委们说道: “我最喜爱的经历之一就是能给我的顾客带去新鲜的东西。但是你们在这个领域是专业的，而且你们正在品尝最好的咖啡，我又怎样能带给你们前所未有的体验呢”？ 　　Anderson出品的咖啡闻起来有褐色黄油味，红茶味，以及均衡明亮的奶油味；尝起来有甘蔗的甜，大麦茶的炭烧，香瓜的香软，以及熟桃的果酸。 　　 第三名：瑞士选手Benjamin Prager的冲煮方法 　　“对于我来说，肯尼亚是世界上最适合栽种咖啡豆的国家”是来自瑞士的选手BenjaminPrager的开场白，同时他也描述了肯尼亚咖啡的甘甜，干净，和强烈的风味。Prager说: “在肯尼亚，咖啡的自然生长区是最接近完美的”。他选择的咖啡豆生长于海拔1800米的肯尼亚山的南侧，接近尼日利亚。因为咖啡豆生长的土地含有火山灰营养成分，Prager说: “咖啡丰富的口感体现了泥土营养成分的充足”。 　　说到Prager的冲煮手法，他选择的滤杯是Hario V60，使用14克筛过的咖啡粉，首先使用350微米不锈钢滤网，再使用250微米不锈钢滤网。然后使用总水量236克，其中30克用于闷蒸。相对于分段注水，Prager的方法是随着水温以恒温下降的一次性注水法，因为他认为这样可以帮助增加咖啡的丝滑感。 　　咖啡的丰收季是在12月，在被采集，日晒或水洗处理之后会被贮存在专门用于贮存谷物的多层塑胶袋中。Prager指出此款咖啡闻起来具有花香，红加仑和黑加仑的香气；尝起来中度偏轻的口感具有蓝莓茶，蓝葡萄，和黑加仑的风味。Prager正好在10分钟之内结束了比赛。 　　 第二名：希腊选手Konstantinos Latridis的冲煮方法 　　希腊选手Konstantinos Latridis使用的咖啡豆是日晒瑰夏，来自巴拿马的微批次。Latridis选择的滤杯是HarioV60，并且使用了15克粉和250克水进行冲煮。首先，Latridis使用96度的水进行30秒的闷蒸，然后使用剩下的水去完成冲煮。 　　Latridis向评委们解释说他选择V60滤杯就像选择使用滤纸一样，因为使用V60容易控制手冲，使用滤纸会使咖啡的口感干净。Latridis还强调了咖啡有轻微的莓果，巧克力，带核类水果的风味；闻起来有木兰，黑蜂蜜，和白茶的味道。拥有着花香和果汁的口感，这款咖啡被Latridis称为“尝起来像水洗的日晒豆”。Latridis的比赛时长为9分32秒。 　　 第一名：挪威选手Odd-Steinar Tollefsen的冲煮方法 　　挪威选手Tollefsen使用的咖啡生豆是来自90+公司的埃塞俄比日晒蜜吻，并把自己烘焙后的咖啡豆描述为“对蜜吻的进一步改善”。这款咖啡生豆是进行遮阴干燥的。在表明只烘焙了7包此款咖啡生豆的同时，Tollefsen说“只有这款咖啡在你的口腔舞蹈时，你才知道它的味道有多美妙，因为咖啡会为自己的味道代言。如果你在喝到它之前进行大量评价，是相当不负责任的”。 　　比赛中，Tollefsen使用了20克粉和300克92度的水，搭配HarioV60的滤杯进行手冲。闷蒸时长为45秒，总萃取时长为3分30秒。Tollefsen在比赛中使用的是来自挪威西海岸的天然矿泉水，此种含矿物质低的水更为柔软和顺滑。 　　为了能让裁判们有实时的冲煮数据，Tollefsen使用了蓝牙把Acaia电子智能咖啡秤与苹果手机连接在一起。Tollefsen的手冲咖啡闻起来有种热带水果，杏，芒果，百香果的香气；喝起来的风味除了以上描述水果外还有草莓的味道；回甘持久香甜，并且伴有含百香果和芒果味道的高品质的酸。Tollefsen正好在10分钟之内结束了比赛。

冰萃是直接放冰块与咖啡粉接触萃取咖啡。冰萃这个方法所需要的主要物料非常简单，只需一个大滤杯、冰块、咖啡粉即可，操作也非常简单粗暴，滤纸往滤杯上一放，倒入咖啡粉，再往咖啡粉上加入冰块，剩下的就交给时间就行了。原理以及大致的做法几乎一模一样，剩下不同的可能是一些参数上的细节，所以学会方法的朋友也可以看一下参数，互相学习学习。在咖啡豆的选择上，前街建议选择一些风味比较丰富的咖啡豆，例如前街这次演示使用的是埃塞俄比亚的桃乐茜咖啡豆，制成冰咖啡会比较清爽可口，白桃乌龙茶般的风味。粉量上，需要考虑到滤杯的大小，咖啡粉最好不要超过滤杯的1/2高度，因为还要考虑到后面放冰的容量。前街使用的是Hario V60的02号滤杯，使用的粉量为30克。咖啡研磨度上会比手冲要粗，20号筛网通过率为65-68%。把咖啡研磨好后，就倒入滤杯中，轻轻拍平，然后注入30ml的凉水，湿润咖啡粉层，目的是避免出现严重的萃取不均。然后往咖啡粉上放入冰块，前街使用的冰块是自制的大块硬冰，这样能减缓冰块的融化速度，如果是使用小冰块或者软冰，那最好还是放入冰箱中萃取。冰块前街加入1:10的份量，也就是300克的冰块。剩下的就可以把壶挪到一边，在室温的环境下等待冰块慢慢融化，萃取出咖啡。
