做法做法一热干面既不同于凉面,又不同于汤面, 面条事先煮熟,拌油摊晾,吃时再放在沸水里烫热,加上调料,成品面道筋道,黄而油润,香而鲜美,诱人食欲.

武汉的热干面么?曾经在贝太上看过一个网友操作方法,比较接近.
首先,面一定要是水切面,这是一种碱面,浅黄色.在武汉的菜场很容易买到.
大锅将水煮沸,水一定要相对比较多,将面下入锅内,煮到8成熟捞出.把捞出来的面摊在平盘内,放与电扇旁,边加油,边用筷子挑起面,以便于面不粘黏.
吃的时候再把面放在一竹篓内,放入沸水内过一边(几秒钟)捞出,再加上热干面的调料即可.
至于调料,最重要的就是不能少了芝麻酱,芝麻酱最好先用麻油调匀.除了芝麻酱以外,武汉街头常见的热干面一般会放入酱油、盐、味精、葱花、胡椒粉,榨菜末,这也是热干面的经典版本.家对面有家小店的热干面做得很好吃,里面还加了些肉末酸豆角,属于改良版吧.
