　　蜂蜜，是昆虫蜜蜂从开花植物的花中采得的花蜜在蜂巢中酿制的蜜。蜜蜂从植物的花中采取含水量约为80%的花蜜或分泌物，存入自己第二个胃中，在体内转化酶的作用下经过30分钟的发酵，回到蜂巢中吐出，蜂巢内温度经常保持在35℃左右，经过一段时间，水份蒸发，成为水分含量少于20%的蜂蜜，存贮到巢洞中，用蜂蜡密封。蜂蜜的成分除了葡萄糖、果糖之种还含有各种维生素、矿物质和氨基酸。1千克的蜂蜜含有2940卡的热量。蜂蜜是糖的过饱和溶液，低温时会产生结晶，生成结晶的是葡萄糖，不产生结晶的部分主要是果糖。　　鉴别方法　　　一、看：看蜂蜜的色泽。纯正的蜂蜜光泽透明，仅有少量花粉渣沫悬浮其中，而无其它过大的杂质．蜂蜜的色泽因蜜源，植物的不同，颜色深浅有所不同，但同一瓶中的蜂蜜应色泽均一。　　二、嗅、闻：蜂蜜的气味。开瓶后，新鲜蜂蜜有明显的花香，陈蜜香味较淡。加香精制成的假蜜气味令人不适。单花蜜具有其蜜源本身的香味。　　三、尝：品尝蜂蜜的口味。纯正的蜂蜜不但香气宜人，而且口尝会感到香味浓郁。将蜂蜜置于舌上，以舌抵上鄂，蜂蜜缓缓入喉，会感到微甜而稍有酸味，口感细腻，喉感略有麻辣，余味悠长。掺假后的蜂蜜，上述感觉变淡，而且有糖水味、较浓的酸味或咸味等。　　四、挑：检查蜂蜜的含水量。我国惯常取未成熟蜜，因此蜂蜜含水量高。市场上出售的蜂蜜大多经过加工、浓缩，含水量相对较低。经筷子或手指挑起蜂蜜，蜂蜜能拉丝者为佳无拉丝现象说明含水量高。也可滴一滴蜂蜜在草纸上，水迹易扩散者，说明含水高。纯净蜂蜜呈珠球状，不扩散。　　五、捻：观察和感觉结晶情况。夏天气温高，蜂蜜不易结晶；冬季气温低，蜂蜜容易结晶。有些蜂蜜本身易结晶有些则不宜结晶。有些人对蜂蜜结晶有误解，认为一结晶就是假蜂蜜或掺假的，这是不正确的。蜂蜜结晶呈鱼籽或油脂状，细腻，色白，手捻无砂粒感，结晶物入口易化。掺糖蜂蜜结晶呈粒状、手捻有砂粒感觉，不易捻碎，入口有吃糖的感觉。　　六、溶：将蜂蜜溶解在水里，搅拌均匀，静置，若蜂蜜中有杂质则会上浮或下沉。蜂蜜是一种天然产品，少量杂质并不影响蜂蜜本身的质量。　　识别掺假蜂蜜　　一看：普通的消费者在购买时应仔细察看外包装并尽可能购买一等品。　　二倒：由于含水量较低，优质蜂蜜很粘稠。假如把密封好的瓶子倒转过来，封在瓶口的空气上浮起来明显比较“费力”。　　三拉：用牙签搅起一些蜂蜜向外拉，好的蜂蜜往往可以拉出又细又透亮的“黄金丝”，有的甚至可以长达1尺而不断。　　四烫：当肉眼无法分辨时，消费者可以拿一根烧红的铁丝检验一下。如果是好的蜂蜜，铁丝插进去之后能看到清烟冒出来，但闻到的还是瓜果花朵的香味。如果是掺了白糖的，则会散发焦糊味。　　五摩：如果购买乳白色或淡黄色的“结晶蜜”，只要挑出来放在手背上轻轻摩擦片刻，那些比食用精盐略细的颗粒就会溶解。这样的方法还可以用来“检验”蜂王浆。　　六尝：冲入温水后，优质蜜水会变成絮状的乳白色液体。如果直接品尝未经稀释的蜂蜜，下咽时甚至会感觉甜得“腻”喉咙。　　七品：一般假蜂蜜是用白糖做的，为了防止白糖沉淀，在制作过程在会加一些白矾，用筷子沾点放在舌头上，甜味过去，要是能品到涩涩的，就是假货，尽量不要食用。　　气味鉴别　　进行蜂蜜气味的感官鉴别时，可在室温下打开包装嗅其气味。必要时可取样品于水浴中加热5分钟，然后再嗅其气味。　　良质蜂蜜——具有纯正的清香味和各种本类蜜源植物花香味。无任何其他异味。 次质蜂蜜——香气淡薄。　　劣质蜂蜜——香气很薄或无香气，有发醇味，酒味及其他不良气味。　　加糖鉴别　　假蜂蜜是用蔗糖（白糖或红糖）加碱水熬制而成，其中没有蜜的成分，或是蜜的成分很少。其品质特点是，没有自然的蜂蜜花香气味，而有一股熬糖浆的气味，品尝时无润口感，有白糖水的滋味。　　为了进一步确认假蜂蜜，可用一根烧红的粗铁丝，插入蜂蜜内，冒气的是真货，冒烟的是假货。也可采用荧光检查。取可疑蜂蜜1份与2.5份水混合均匀，向不透光的载玻片上涂2～3毫米厚层，或放在不透荧光的试管中，在暗室中进行荧光观察。一般在天然蜂蜜中，颜色呈黄色略带绿色的，是优质蜂蜜，如果色泽草绿、蓝绿，则是劣质蜂蜜，若色泽呈灰色的，则是用蔗糖调制成的假蜂蜜。
